Ingredients:
· 1 tin of sardines (drained, liquid reserved)
· 100g pasta
· 2 tbsp olive oil
· 2 cloves garlic (sliced)
· 1/2 lemon (zest and juice)
· 1 tbsp capers
· Parsley
· Parmesan cheese
Instructions
· Cook pasta in boiling salted water.
· While pasta cooks, heat olive oil in a pan over medium heat. Add the garlic for 1-2 minutes until fragrant but not burnt.
· Add the drained sardines to the pan, breaking them up gently. Add 2-3 tablespoons of the brine (or pasta water) to the pan to create a light sauce.
· Add capers and lemon juice.
· Transfer cooked pasta directly to the pan, adding more pasta water if necessary to coat.
· Top with fresh parsley, lemon zest, and Parmesan.
